So according to the support page for Nest Learning Thermostat 3rd gen, I should be able to use it with matter (to add it to my existing home setup).
I have installed the thermostat, set it up on my wifi network, and even added it to google home which I never used before. All the instructions say I should get the device link id from the google home app. The Linked Devices section does not appear at all under thermostat settings.
I have multiple devices on my network that can be used as border routers so in principle this should just work.
Is there a way of forcing the thermostat to register/work with matter?

Currently looking into the Google Store page with that info. Waiting on the Google team to get back to me on that and I will update here.
According to this Nest thermostat software update history - Google Nest Help , only the Nest Thermostat got the Matter update.

Your thermostat, the Nest Learning Thermostat, isn't currently supported for Matter. It may have an upgrade in the future but as of now there is no way to implement Matter.
The only thermostat with Matter support is **Nest Thermostat** with software 1.3
