The Nest was a gift. How do I set it up to HOLD and not be affected by ECO or schedules. You know just like it was 50 years ago

First of all you must turn off the Home/Away feature. Turn off Auto Schedule, Turn off Early-On, Turn off Cool to Dry, turn off Sunblock, finally turn off Airwave. Then setup cooling schedule with a specified set point for each day that is the same for the summer months. Then set up a heating schedule with a set point you want to maintain in the winter. Again, each day the same temperature. Last, set the mode to Heat and Cool. If the ambient temperature go above the cooling set point, the AC will come on. If the temperature drops below the heating set point the heater will come on. Make sure the heat set point is minimum 3-degrees below the cooling set point. I use cooling at 78 and the Heating at 65.

Thanks for following up Edward. After going through all the details, I have decided to revert to a simpler old fashioned thermostat. Apple made it too complex just to have a hold function. But, I appreciate your effort.
