I have nest thermostats and nest protect. When I look at the history in the nest app for any device, the time is wrong in the history. It seems to be about 8h earlier. E.g. Our power went out at 4am but the app shows it going off at 8pm the day before. I can't find anywhere in the app to set my time zone or address. The schedule works fine at the right times somehow.

Oh no! I'm sorry to hear that. Let's see what's going on. What phone are you using (Android, iOS)? You can try clearing the cache, then force close the Nest app to see if that helps. Also, try reinstalling the Nest app to make sure it's up-to-date. Keep us posted.
