The thermostat will not call for AC until the temp is one to two degrees hotter than the set temp. This might be OK during the day, but at night, us light sleepers actually wake up because of the slightly higher temp and humidity. Is there a setting to change this? Our only other option is to set a lower temp for nighttime but that kind of defeats the whole energy saving purpose.

I'm sorry for the trouble this has caused you. Let's sort this out.
Did you program your thermostat with Eco-temperatures? Turn off both heat and cool in the settings. Disabling the auto-schedule might help, but it won't trigger the temperature change on its own. So when you set your desired temperature, it'll only follow it and turn off when it reaches the target. Also, please restart your thermostat whenever changes are made to its settings.
