I understand that I can stick the system in heat or cool and set it outside of the range, but I really could use a "fan only" mode. The problem is that the schedule may change the setting without my intervention, and the system will kick on while I have windows open when all I want is for the outside air to be circulated around the house. I have no recourse other than deleting my schedule completely which I really would rather not do, especially since the "learning thermostat" was a selling point for this thing. This is a bad user experience for me

Sorry about the frustration you're having. I'll be happy to help you sort this out. The fan only mode is possible with the Nest Thermostat, but it depends a bit on the HVAC system you have and the wiring. Your wiring will need to have a dedicated fan wire, which will allow you to run it without heating or cooling. We have an article that explains things here: https://goo.gle/35FT3uj.
