I'm currently using a 2006 Google Wi-Fi model, it's connected to my Xfinity modem router, that also includes voice. I'm considering on purchasing Arris modem router where the voice to replace the Xfinity router so I don't have to pay 180 bucks a year for a 3-year-old modem. When I buy the new modem and set it up do I have to reset or do anything to the Google Wi-Fi access point that's connected into the modem, like starting from scratch.

If you get the same WAN IP from your ISP if changing modem, you should be good. Ask them about it. Else, if the WAN IP/ global ip changes, I've experienced that my Nest Wifi router had a hard time picking up the change and get internet connection again.
It _should_ work even if IP changes. But worst case you have to factory reset you Google Nest Wifi puck(s) (https://support.google.com/googlenest/answer/6246619?hl=en) and set them up from scratch (https://support.google.com/googlenest/answer/9548301).
