Block youtube.com on Google Wifi. Family groups are not the answer. Please help. I see lots of posts about this, but no real answers. This is a constant problem for parents with kids that have school assigned iPads that are locked down so parents can't change anything on the device with the screen time utility but YouTube is wide open.
If I can block it on my home network, problem solved. Please advise a solution for this, thank you.

Nest Wifi simply does not provide such capabilities. Maybe you can add a DNS sinkhole into the mix, like "pi-hole". But that's advanced networking, and does not neccessarily work either, as devices often can use DNS outside going through the router. Chromecast for instance does this, it's hardcoded to use Google DNS (8.8.8.8) no matter what.
I'd look into some other, more advanced networking equipment than Nest Wifi if I were you. Rather than hoping and waiting for it to be added to Nest Wifi.
Feedback to Google can be added through the Google Home app.
