Is there a step-by-step guide to setting up Google Nest Wifi with Verizon Fios QG1100 internet and TV? I'm guessing I have to keep the router/modem but just use the Nest as the main wifi router. All I see on here and google are articles linked to articles linked to articles ... and not a simple guide. Pretty wild Google doesn't have a walk through for this.

It's the ISPs that should make guides on how to use any regular 3rd party router with their equipment, not the other way around.
In this case Verizon are the ones making it extra complicated, it's much easier with other ISPs.
From spending too much time Google-ing, it looks way too complex, as you say. But here is what I found:
Edit: Maybe this video gives some clarity?

Haha thanks @olavrb - appreciate the quick and thorough response. I just went through all the exact articles you sent and was in the middle of that YouTube as I opened this 🤣. Yeah I hate Verizon but stuck with them at the moment. Think I'll return the Nest and use a booster until I can get rid of my Verizon.

Yup, sounds like a plan. Seems there will be too much effort, and maybe even more equipment is needed, like MoCA adapters.
No worries, it peaked my interest to find it out at first, but I hit the breaks when I discovered how deep the rabit hole went. 🙂

Felt the exact same way. When it was like you need a new adapter...I checked out haha
