I have network cabling available in each room of my house. It's a large house so I didn't want to carry the signal over wifi from the primary puck downwards.
By introducing a switch, can I improve wifi signal by hard-wiring the 2nd and 3rd pucks to the switch?
i.e.
Modem->Primary Puck->Switch->2nd Puck WAN+ 3rd Puck WAN
Would this setup work or does the signal HAVE to be transmitted over wifi?

No you can use a switch I actually highly recommend it

This is known as "wired backhaul" and is supported. More info:
Your topology looks correct. Just make sure to get an unmanaged switch with no fancy features, like anti loop detection/ protection. My go to is a Netgear GS108. 🙂
