I currently have starlink and I use its router/wifi. I also have a Google nest wifi router and 1 access point too. I do not have the starlink ethernet adapter cable to connect to my nest router via ethernet. My question is, can I use my nest wifi router or access point to extend the range of my starlink router/wifi?

No it can't, the main/primary/master Nest Wifi unit must be connected to the internet by ethernet cable.
