It's totally fair to be a bit confused—Google actually has two different apps that do similar things (the Nest app and the Google Home app)
The Nest app is the "remote control" for specific older Nest products. Depending on what gadgets you have, it allows you to:

Control Temperature: Turn the heat up from your bed or check if you left the AC on after you've already left for work.

Security: See a live feed of your cameras, talk to people at your front door, or arm your security system.

Safety: Get an alert on your phone if your smoke detector (Nest Protect) goes off while you're out.
