Can I stop my speaker for one hour to turn off

No. It's 1%, 2%... 100%.

You can set commands to execute at specific times using routines, but there's no explicit way to set an interval. Nonetheless, people have hacked up some solutions that may do what you want. Please read the Creating a routine with delay between steps Google Nest Community post to find out what they've done.
