I like to use the tab that says "play relaxing sounds" to go to sleep. However when you select that tab it will just play a random sound from a small selection. I don't like all the sounds it has loaded, and so to find the sounds I like I have to keep clicking in and out of that tab until my favourite sound comes up in the shuffle. Or, I have to say it out loud and be specific in which one I want over "OK google"
Is there a way to remove the ones I don't like from the selection? Or to select my favourites, even just one, so it only ever plays that one?

I'm afraid that there's no option to set a favorite ambient sound. Instead, if you have a preferred sound that you want to play, you may choose from the following:
Please note that Ambient sounds will continue to play for 12 hours if not turned off. To turn off ambient sounds, say "Hey Google, stop."

It would be really nice if you could select the specific sound you want, or if the list rotated through each available sound - as it is, you are at the mercy of whatever is randomly selected when you open the app. If you want a specific sound to play, you have to exit and re-enter the app until it randomly selects the sound you are looking for. There is a musical note icon in the app that serves no function. It would be great if that listed the available sounds for selection.

I understand your concern about the randomly selected relaxing sounds.
Despite there is no option to choose a specific relaxing sound, as you can see in this article: Play white noise and sleep sounds on Google Nest speakers or displays. You can ask Google Assistance to play a specific ambient sound by saying: “Hey Google," and then mention the specific ambient, for example: "Hey Google, play River sounds."
