It is a little bit different from your case, but I am also having issues with the camera streaming feature that changed recently. Until now I was able to play Spotify music while streaming a camera, and now whenever the camera streaming starts, the music stops and can't be set to play anymore.
I'm not here to give you a solution but rather share my case and let you know you are not the only one affected by the developers changes...
If I find any solution or anything that could help I will share it here.

Hey folks,
Thanks for sharing details about the issue here. I know how challenging it is when you're experiencing issues with your Google Nest Hub. A few questions: what type of Nest Hub do you have (1st, 2nd gen, Hub Max)? What is the current firmware version?
@Trospa: To confirm, do you still experience the same issue when devices are in different rooms? Does it happened when you play music from other music services like YouTube Music and Spotify?

I actually have all three hubs, 1st Gen, 2nd Gen, and the hub max. I also have both 1st Gen Home audio speakers, and the newer Nest audio speakers. The firmware seems to be system=10.20221207.2.100042 cast=1.68.356352
In the app, I have moved all my display units into their own "room" I named "all Displays". This is my workaround for now since each speaker is now isolated to their separate rooms. But to confirm, yes the problem persists if I move any display into the same room (on the app) in which I am playing music on the speaker in that same room. It occurs with Pandora and YouTube music. I don't use Spotify so unsure about that one.
Also, to confirm, I have verified none of the speakers have any displays set as their "default tv". Instead, I have now changed all of the defaulted tvs to my actual smart TV in the living room. You may laugh but this has created chaos in my home as whenever anybody asks a speaker to show the front door camera in their bedroom in their display, the main house tv is hijacked instead. Makes me giggle everytime I hear a kid or the wife yell "dangit Google!" at the TV while another kid elsewhere is yelling over and over at their speaker to show the front door cam. So I've not told any of them about my workaround change, nor that I've began troubleshooting the issue with you! Haha! Even though I'm laughing about that, please help solve my original issue as these kids and wife won't stay dumb about it much longer. Just a matter of time. Then it may be my death since I converted us from Amazon Alexa to Google Home without their consent. Thanks for keeping me alive!
