I have a google display in my kitchen. It has previously been connected to my google account and showing on my home app, no problem.

Perhaps this is a temporary glitch on Google Nest's servers, or one that can be resolved by rebooting your Nest Hub by unplugging it for a minute or so.
On this thread from last year, it occurred on several Nest Hubs, and resolved itself:

Hi there,
I’m jumping in to check if you are still in need of help. Were you able to get contact with our support team? If not yet, let’s further isolate the issue with your Google Nest Hub Max. A few questions: do you see your Google Nest Hub Max in a room within the Google Home app, or under Other cast/Local devices? Do you have household members in the Google Home app? If yes, can they see your Google Nest Hub Max in the app?
Try to factory reset your Google Nest Hub Max > Uninstall and reinstall the Google Home app > Set up Google Nest Hub Max.
