Unstable bug filled hot mess is how to best describe Google Home "Speaker Groups" at this time. Hopefully Google will address it sometime soon, but this has been an issue for some time. Speaker Groups will disappear from the list, then reappear, then if you create another then suddenly you have duplicates and that will cause conflicts too, the groups will show on one phone but not the other, all this even after full network reboot, etc. It's a persistent problematic issue. Google needs to get this UNSTABLE BUG FILLED HOT MESS solved. I will note, I'm a tech expert, so I know how to troubleshoot.

Agreeing with ALL of the comments you have.
Except for the "Hopefully" and "sometime soon" parts.
I have very much tried to 'Manage & therefore Lower my Expectations' here. You may want to as well.
I have been having issues with my Group of FOUR Google Nest speakers: 2x Nest Audio and 2x Nest Mini for ... well, forever.
It has been a constant running joke at my house about how bad the App is and how useless Assistant is regarding the Home/Audio functionality.
Just now, in an effort to actually get Assistant to play sOmEthInG on the group, I deleted the [new yesterday] group and recreated it. It actually renamed one of my Nest Audio speakers as the group. Assistant cheerful says [on the 2nd or 3rd request "OK. I'll play it on Main Group", then ... nothing. The Home App often shows a speaker is playing in Favourites and/or Devices... but when you open the device, surprise!!! "Not Playing"
Stopped being confused, surprised, & annoyed a while ago.
Now I just seethe silently. Or very loudly.
In "Google Speaker Groups not working" [where Replies are disabled for this topic], I originally posted my two word review of Nest speakers:

Remorse.
This continues to be my thoughts 2 years later..
Google will never be able to figure out groups.
They can't afford it after the Sonos lawsuit, and
They're, just, not, that, smart....
[As Assistant reminds me constantly: "I'm sorry. I don't understand" to which I reply: "Yes. I know. You're stupid. Thanks for the reminder"]
*Mentioning: I purchased the speakers as I was a Nest admirer having a Gen2 Thermostat and 2x Protect Smoke/CO2 hardwired detectors [which btw... Home can't even find/recognize. So don't bother looking to add them]
I therefore continue to use the NEST App [Only, for those. Because it ALWAYS works] for those products which are GREAT!.
