So i recently reset our google mini's and ever since the google mini only responds in the assistant voice of the account holder (me) as opposed to the individual voice chosen by my wife.

Sorry that the team is making you go back and forth. However, as I stated earlier, this is a voice recognition issue. Voice recognition is controlled by Google Assistant and is not the actual device's issue.
If you'd like, you could try to do a reboot and Factory Data Reset on your Google Nest Mini. Please let me know if this resolves the issue or not.
