Thank you for your message. Unfortunately, there is not a way to turn off automatic updates. I understand how this is an issue for you, I have watched my devices update automatically by itself as well.
Rest assured that we're always open for ways to improve, so we'll take this as feedback and pass it along to the team. We encourage you to do the same by using your own device or Google Home app and following the steps here.
