What gives? Why would it think it needs to know my voice (which is enabled and working) to dismiss a reminder by tapping it on the screen?

Thanks for reaching out.
On your Google Nest Hub display when you set a reminder, the screen will dim. To hear the reminder, you can use one of these voice commands:
After the Assistant reads the reminder, the reminder is automatically marked as read. Dismissing the reminder by tapping the screen isn't supported. Try retraining your voice to your device to see if that helps.

I'm sorry. I'm going to need a confirmation this. It's not supported to tap the "dismiss" button on the screen of a touchscreen device to dismiss a reminder? You realize how ridiculous this sounds, right?
It works on the Nest Hub Max.

I'm sorry for the confusion. To make sure, what's the exact command you've used in creating your reminder? When it's time for the reminder, what's showing on your Nest Hub?

Hey google, remind me to check on the laundry in fifty five minutes. (From any device, by voice)
On the screen shows a finger with string icon in a square with the text “Check on the laundry” followed by Boss (my name) - 1m ago. I tap on that and it flashes and takes me to a screen with reminders. I tap the checkbox to dismiss and get the response about not being able to verify my voice. But it DOES dismiss the reminder.

I don't really care to have this "issue" fixed for me personally. I was simply trying to let someone know that there was a bug in the system that any reasonable developer would want to address.
