I’m having problem with my Google Nest Mini, when i activate it, it answers me with the same phrase: “I’m sorry I’m not able anymore to do it” Can someone help me?

You could try a simple reboot, either by unplugging your Nest Mini for a minute or so, or by going to your Nest Mini in the Google Home app and going to Settings | More [...] | Reboot.

I'm sorry, but it didn't work. I'll try to explain better my problem better. When I ask Google some basic things, for example: "how to make a plate of pasta" or "how many degrees do you cook a frozen pizza", it replies: "sorry I can't do it anymore"

Those are not the kind of questions I would ask using our Nest Mini because there isn't any one right answer, but when I tried those questions, I answers prefaced by "I found this on a web search".
I don't know why you get "Sorry, I can't do that anymore."
