I’m curious if something is possible.
Can I have a google home device be connected to a Bluetooth receiver connected to a speaker, play audio to the connected device when I ask it to, but when I don’t ask it to it plays on the google home device without needing disconnecting the Bluetooth receiver? If that is not possible, if I disconnect the default Bluetooth speaker will it automatically play on the google home device without hiccups?

Hey there,
Sorry for the delay in our response, but I'm happy to provide some clarification.
If your speakers have bluetooth capabilities you won't need a bluetooth receiver. Instead, all media playback will play on an external speaker that's paired with the Google Nest device. Things like Assistant responses, alarms, timers and other things will play on the Nest devices. If you're wanting to play music on Nest devices, you'll need to disconnect your speaker from the Nest speaker but you can leave it paired together.
