Every time I ask my Google assistant to set an alarm for midday or noon on the nest she responds "ok, setting an alarm for tomorrow at midnight"

Do you live in the US or have your language set to English (United States)?
I live in Australia but I have my language set to English (United States) and "Hey Google, Noon alarm" and "Midday alarm" works here.

Using a 12 hr clock the day begins at 12:00:00 AM (midnight) and ends 11:59:59 PM. If one requests a midnight alarm, one is requesting the alarm at 12:00:00 AM which is the start of tomorrow.
My best guess at the "midday" issue is difficulty understanding pronunciation of midday vs. midnight. Asking for a noon alarm instead of midday should take care of pronunciation confusion.

I asked for both a Midday and Noon alarm to be set and it complied in setting the correct time, but it always replied with "noon" instead of midday.
You should try setting your app to English (United States). Other than a few quirks (although can't really think of any right now) it hasn't ruined my smart home.
If anything it has improved it.

I find the American accent really grating but I'll try it and see

Mine replies to both "noon" and "midday" by setting an alarm for midnight... The only way to correctly set a midday alarm for me is by asking it to set an alarm for 12:00 PM

That's just the why you'll have to go then.
"12 pm Alarm"
