I'm trying to use these instructions to pair my Chromecast Ultra to a
bluetooth speaker, but there is no "Paired Bluetooth Device" option in
the Audio settings.

Did you see that this is the first link in Google when you search for
"connect chromecast ultra to bluetooth speaker"? You should probably
talk to your community managers about that.
Can you please provide your source? The help page I linked does not show
this restriction, and is the very page Google sends me to when I search
"connect chromecast ultra to bluetooth speaker."
