Did similar, I added a mesh Wi-Fi system and it works perfectly, funny enough my Chromecast was having the issues but my mini's were fine.

I ended up buying and adding a pair of mesh Wi-Fi extenders and the Chromecast and my two minis connected perfectly, I had tried all suggestions without success.
