When using Chromecast built-in my picture quality is not showing it as 720 although the stream is available and selected in 720. Also whenever it connects the volume is at 100

Not w/this particular thing but I have noticed that I get the chrome symbol sometimes when trying to cast. I have built-in Chromecast on a Hisense Tv all things are updated.

Awesome, thanks for getting back to me! Here is what I suggest you try:
If the issue happens with your apps, and multiple websites, the issue may lie on the Google Home app or Chromecast. However, if the issue only occurs with watchwrestling.ai, then there may be an issue on their end when it comes to casting from a cellphone, from that point, see if the issue is still occurring when casting from another device, such as a computer or tablet.

At the time it seems ok, my Android TV doesn't have Google Home only my phone.. I haven't really tried any other websites. I do notice that when it connects the volume automatically goes to 100 though.

The issue may be isolated to watchwrestling.ai, since the ability to cast has to be added by the website developers and there may be an issue on their end. As for the volume going to 100 automatically may be an intended feature. If this is something you'd like to see changed in the future, I'd recommend that you submit feedback via the Google Home app to let Google know.
