This is an issue with linking my Nest account with my Google Assistant.
What is working:
I have only one account with Nest, and it's my Google account. I have 2 Nest Thermostats, and 1 Google Nest Doorbell (Wired). The thermostats and doorbell were added to Google Home years ago. We can change temperature in the home through "OK Google..." or manually in the Google Home app or through our Google Nest Hub, Google Home Minis, or Google Mesh WiFi Points. We can navigate to the Doorbell in the Google Home app or on the Google Nest Hub and manually see what is captured on the camera.
What I'm trying to accomplish:
I want to display on the Google Nest Hub the video from the Google Nest Doorbell (Wired) when someone rings the doorbell. This video here shows how someone accomplished this on an older version of the Google Home app.
What is not working:
When I attempt to connect to Nest in the current version of the App, it launches a login screen that gives me no option to sign in with my Google account. It gives me the option to enter an email address and password ONLY. In an incognito window, I can recreate what I see by navigating here, then selecting Sign in with Nest. The main difference though is when given the option to sign in through the app, there is no option to Sign in with Google.
Note, I've tried this on both an iOS Google Home app and in an Android OS Google Home app. The behavior is the same in both cases.

Looking through different options from online, I attempted the following:
1. Changed my default browser to Safari on my phone
2. Logged into home.nest.com in Safari with my Google account.
3. Verified I could see my functioning devices in Safari at home.nest.com.
4. Closed out Google Home App.
5. Relaunched app and navigated to the point where I had tried previously to connect to Nest. When it started loading the "browser" to launch the window for logging in, before it made it to the screen I tapped the option to open in Safari.
6. Now I FINALLY get a different screen. It's not helpful but it says:
"Set up this device in the Google Home app" followed by "Now that you've migrated your Nest account to Google, use the Google Home app to connect devices that work with your Nest devices. Go to the Google Home app, tap Add > Set up device > Have something already set up? Then find the name of the company that makes the device you're adding.
Still haven't gotten things to work but this is where I'm at so far.

I can't tell from your post whether you have a 1st or a 2nd gen Google Nest doorbell, or whether you've actually migrated your Nest Account to a Google Account, or what is really going on.
If you have a 2nd gen Google Nest Doorbell (you say you added it years ago to the Google Home app), then you should be able to to go to your doorbell in the Google Home app and go to Settings | Doorbell and turn on "Visitor announcements" (https://support.google.com/googlenest/answer/7672451).
If you need more help, try contacting Support:
1. Go to https://support.google.com/googlenest/gethelp.
2. Select a category/product family, and type in a brief description of the issue, then click "Next".
3. Select your device from the dropdown, click "Other", then click "Next step".
4. Under "Resources", just click "Next step". (Clicking one of the listed links will bring up a Help page.)
5. Under "Contact options", choose to get a phone call or chat with the team, depending on availability in your country.

I have what I believe is gen 2, but it was packaged as Google Nest Hello Wi-Fi.
I have visitor announcements turned on. Nothing gets announced.

Also, the Account is a Google Account, so I think the right way to refer to it is as a "migrated account". I do not remember ever having just a Nest account.

We had a Nest Account originally, and logged into the Google Nest app with a non-Google Account. We have three 1st gen Google Nest Hello Doorbells that were all installed in the Google Nest app. We migrated our Nest Account to a Google Account in 2020. We still use the Google Nest app (signing on with Google) to configure our 1st gen Google Nest Hello Doorbells. We have "Visitor announcements" turned on for all three, and get announcements on all of our Nest Hubs and Nest Mini.
Is your doorbell in the same Google Nest "home/structure" as your Nest Hub?

Good question: Yes, all the devices in our home automation are accessible in Google Home in the "Home" location. The doorbell is titled "The Front Door" and it's in the "Front Door" room. The Google Nest Hub is titled "Kitchen Hub" and it's in the the "Kitchen Counter" room.

So if you go to your 2nd gen Google Nest Doorbell (called "The Front Door") in the Google Home app, "Visitor announcements" is turned on?
If you go to your Nest Hub (Called "Kitchen Hub") in the Google Home app, do you by any chance have "Do Not Disturb" turned on? (That would prevent announcements.)
Can you view your doorbell's camera from your Nest Hub? (You should.)

I can view my camera from my Nest Hub. I'll double check the Kitchen Hub for do not disturb when I get home. Visitor announcements is turned on on The Front Door.
