When will the Nest Doorbell (2nd generation) in ash color be available in Belgium or EU?

Same for 4th Gen Thermostat. In general EU versions of store are lacking not only devices (nest protect too) but also quite a bit of accessory items, packaging options (like 2-pack of Wifi Pros or Nest cam with power cord) or even color options.

And all of this extends to software limitations too - like like of 5GHz support in EU on some of the devices or missing random features like Garage Door detection on the Nest Cam.
