I use the doorbell with the camera off to save battery and avoid excess notifications.
When someone rings my doorbell: I get a notification, I click the notification, the Google Home app loads, I’m taken to a screen that shows the battery and the camera is off.
This isn’t helpful at all.
When I get a notification and I click it on my iOS device, I want the Google Home app to take me to a screen where the camera is on, recording, the mic button is present, and my quick responses are available. Then when I leave that screen or close the app, turn off the camera in the minute or so and return the starting state.

Also, I'd suggest creating an Activity zone to avoid excessive notifications. Learn more here.
