When switching to a new Wi-Fi network, the simplest approach with Google Nest devices is to use the same network name (SSID) and password on your new router/modem that you used on your old router/modem.
Your post does not indicate whether you have 1st or 2nd gen cameras or doorbells, but in both cases you have to perform a factory reset before reinstalling your devices. See this Help topic:

I'm not sure what you mean by "the QR codes you have" or how purchasing them from Dish fits in, or how you can get a message saying that the QR code is "not correct". For 1st gen cameras and doorbells, the QR code is printed on the back or bottom of the device, as is the 6-character alphanumeric setup code that you can also use to install or reinstall. For most 2nd gen cameras, the QR code is on a sticker on the face of the camera, which you are advised to save before installing; otherwise its printed somewhere on the device.

I'm just another Google Nest customer, but I don't know how the install process could tell you the QR codes are "wrong". For Google Nest doorbells, the QR code is printed on the back of the doorbell and on the Quick Start Guide. For 2nd gen cameras, the QR code is on a sticker on the face of the camera. If Dish left you the wrong QR code, you could try contacting Dish, or you could select "Continue without scanning" and use the 6-character alphanumeric setup code printed on the bottom of the camera, or, in the case of the 2nd gen doorbell, printed below the QR code.
For 1st gen cameras and doorbells, the QR code is printed on the back or bottom of the device, and the 6-character alphanumeric setup code is printed above or below the QR code.
As I mentioned earlier, you also need to perform a factory reset before installing on a new Wi-Fi network:
