My nest doorbell is not ringing on any of my devices inside when it is pressed.
It won't allow me to turn on the 'ring indoor chime' option in my home app either.
I have a home hub and a nest mini speaker both connected to the same WiFi.

"Visitor announcements" is SUPPOSED to send visitor announcements to all Nest Hubs, Nest Minis, and Nest speakers in the same Google Nest "home/structure" for the same Google Account as your doorbell, but I've seen several posts from customers saying this isn't working for them with the battery doorbell.

The "Indoor chime" option is disabled and greyed out if your doorbell is running in battery mode only and is NOT wired to an indoor doorbell chime.

So does that mean that I will not be able to hear if someone presses the doorbell if I am using the battery powered Nest doorbell.
If I don't have my phone on me or in the same room as my home hub, I am always going to miss the person at the door?!?!?!?!

I'm not sure what you are asking. If you do NOT have an indoor doorbell chime, how can your doorbell ring a non-existent chime? Or if your battery doorbell is NOT wired to your indoor doorbell chime, how can it ring it?
But if you have "Visitor announcements" turned on, it SHOULD send visitor announcements to your home hub AND Nest mini speaker (as well as a push notification to your phone). If it is NOT doing THAT, you could try contacting Support: https://support.google.com/googlenest/gethelp
