is there any way to get the battery operated doorbell to "chime" via the hub?

I've had my battery operated doorbell for about a year now, and up until last week if someone rang the doorbell it would "chime" via the google nest hub.  I've looked at doorbell settings and ring indoor chime is greyed out.  Everything is on the same wifi network,

If I'm at the back of the house without my phone, I will never know if someone is at my door.

Indoor chime refers to the physical chime your old doorbell might have had. If the doorbell isn't hooked up to that then it probably never had one. What you are looking for is the visitor announcements under doorbell settings.

just to confirm - vistor announcements - that will play an alert chime via my hub?

I just tried it with me. It showed the camera and said someone is at the door. Sometimes it says the name of the person. Also my non hub speakers also said it.
