Hello, my Nest cam is an older model (probably about five years old). I discontinued the cloud storage because I have other cameras, but I'd still like to be able to record from this one. Is there any way to do this? Or is the only way I can record and play back is by signing up for cloud storage? Thank you!
Quick answer is only way to record is via nest subscription.
Long answer is... You can set up a computer, log into the nest web portal for your camera, and record the screen, which would give you access to the recordings. This will require a lot of data and a constantly running computer, but it is possible. Saying this, probably easier to pay the monthly

I am terribly sorry to hear that you have had such a hard time with this! I would love to look into this issue further and help find a solution for you. What troubleshooting steps have you done thus far?
Have you tried to restart your device if you haven’t already?
If the restart didn’t work, have you tried to do a Factory Reset? This would be a last resort option, but would clear out issues and the device would essentially be ‘brand new’
