Hey I have the next mini 2nd gen and I was really delighted with it's performance the first month.
Now I have a few issues that I would love to get help on:
1.I once set a media alarm that will trigger a song after the general alarm and I can't turn this option off anywhere and I'm really annoyed.
2.Can't seem to find a option to stop auto playing songs , I want just what I asked for not more!
3.It's hey google function is less responsive over time , it just doesn't seem to get it like it used too

That certainly hasn't been easy for you ― let’s check this out.
About your alarm, you can try this voice command “Hey, Google! Cancel my alarm”. It will respond by stating the active alarms and just say yes. Other way is to follow the steps below:
For the auto playing songs, what is the exact command you’ve given? If you only specify the song then it should only play that specific song.
Now, for the slow response, does it happen everyday? How long does it take to respond? I suggest you do a reboot of your Google Home/Nest device. Unplug and re-plug the power cord for 5 mins. This should be done at least once every 2-3 weeks since these devices are connected to Wi-Fi 24/7. This is to avoid congestion. If possible, do the same with your router/modem.

Hey Dan ,
My problem with the alarm is that about a month ago I set a media alarm once , that plays a song after the alarm .Ever since then it keeps playing that songs even though I tried "Set a general Alarm" or " cancel all media alarms " but my nest keeps playing that song after EVERY alarm which made me absolutely hate that song.

Rebooting the nest helped with the delay.

Hey there,
I'm sorry for the delayed response. If you've already tried the steps I provided. We might need to revert your Google Nest Mini(2nd Gen) back to its default and original settings by doing a factory reset. Click here for the steps. After the factory reset, you need to set it back up.
