I want to put a hold temperature on both thermostats, with a different temp on each one with the eco mode so it holds for several days. However when I set the second one it will not allow me to have a different temperature. How can I do this.

Since you have 2 houses, presumably each with its own Wi-Fi, have you set up 2 Google Nest "homes" with a thermostat in each "home"?

Yes I have at least I believe I have. As I look at the home screen on the app I have to select which address to monitor

If you have 2 thermostats, each in a different Google Nest "home", it seems a software defect to require both to have the same setting for anything. And if you have to select a "home" on your home screen in the Google Home app, you have 2 "homes".
You could try contacting Google Nest Support for an explanation:

I do not know how to reply as half the time it is returned by the mail deamon when I open your email there are a couple reply buttons which one do I use
