Add turn off AC option “Off” to the schedule to Nest thermostat. This is a very helpful feature since sometimes during the summer or the winter afternoons we need to turn off the AC so we can refresh the air inside the house.

Isn't that what the Fan option is for?

I use schedule and set temp high during some time period but set the fan to run 30 mins for every hour.

Smart thermostats, which use a schedule to set the temperature, desired by certain time of day, do not have a “off “programmable. For example, if you want to turn your system off, all thermostats have a on off capability of the system, for example, in traditional thermostats, it was called HEAT-OFF-COOL. And the fan was AUTO-ON.

all thermostats have the ability to turn the system off in the same way, including intelligent, thermostats, or smart thermostats. However, since the schedule is designed to associate a time of day, with a desired setpoint temperature, it makes no sense to put a off point. if you think about it, there’s a heating schedule and a cooling schedule. And why would you ever want to program in at a certain time of day to turn off the system when in fact, you have no idea what the temperature outdoor is going to be from day today. However, the schedule will deal with it by either adjusting it warmer or cooler based on what schedule and what motors in operation.

Now, then, the nest can be set to turn off the system mode, either from the app, or from the direct display of the thermostat.

Like I mentioned above, I want to make sure the AC doesn't turn on during afternoon hours when I open the house doors and windows to get fresh air.

Simple, when you open the windows and doors to allow fresh air to blow through the house, go to your nest, thermostat and turn the system to the off position. You can do this with the app or you can do it with a thermostat itself. The same thing is true of your old thermostat.
