How do I end hold on Nest Thermostat - 4th Gen on IOS
I have tried everything and it appears stuck

If the app appears to be stuck, you can also try ending it on the thermostat directly.
it's fine on the thermostat and stuck on the app
No worries, in that case try simply force closing the app and re-opening it:
Close an app on your iPhone or iPod touch – Apple Support
If that doesn't solve it, you can try uninstalling the app and reinstalling it.

I have done that, several times - still stuck
As in the issue persists even after removing the app and installing it again?
Are you using the latest version of iOS? iPhone settings > General > Software Update.
