I have two Gen 1 Nest thermostats. I have factory reset them multiple times and turned off all schedules and learning capabilities. I have deleted all schedule points. Both thermostats randomly set the heat to 72 degrees multiple times throughout the day and night. It gets so hot at night I can't sleep.

Nest internal battery might be on low charge .

How would that cause random heat set points to 72 over months? They are hard wired.

The Nest Learning Thermostat can learn your day-to-day schedule and adjust it accordingly. Auto-schedule learning is on by default. You can turn off this feature by going into your Nest.Thermostat, go to Settings Nest Sense Auto-Schedule(Turn off Auto-Schedule).
