I want to set the thermostat to HOLD a temperature. I can not find a HOLD option.

Yes, Nest Thermostat (2020 model) and Nest Learning Thermostat (4th gen) just released support the feature.

The hold temperature feature is indeed not available for the Nest Thermostat E or Nest Learning Thermostat models unfortunately.
The closest option to this on your model of thermostat is to disable learning for the temperature schedule, so that the schedule doesn't change unless you manually make changes to it.

Thanks kinda dumb to not have a HOLD option. Do you know if the brand new one just released does?
