I seem to be having the same issue as this post:
I have completely removed all points on my heating schedule in the app, disabled “Auto-Schedule” in the app, and turned off Auto-Schedule on the thermostat via Settings->Nest Sense->Auto-Schedule.
I just would like it to stay at one temperature throughout the day without it automatically changing itself.
This happens for both heating and cooling.

Really appreciate you reaching out. To answer your question:
It’s a Nest Learning Thermostat
No, it’s not in eco mode.
Reproduction steps:
Factory reset the thermostat.
Link the thermostat to your nest account.
Disable auto-schedule on thermostat by using the settings in the physical thermostat (not the app).
Remove all “temperature points” from the “Schedule” in the app for Cooling mode.
Set the thermostat to cooling mode.
Wait until 7:00 PM.
Expected result:
By 7:00 PM, the temperature will automatically get set to 72 degrees.

Are you enrolled in an energy-saving program feature such as Nest Renew or Rush Hour offered by your utility company? With this, the Nest Thermostat automatically tunes temperatures before and during rush hour to reduce energy use and lower grid costs.

Is your Nest Thermostat accessible to anyone in your home members? Also, do you have the Google Home app? If this is the case, try removing all created routines. Follow the steps on this page to change home or away settings and let us know how it goes.

Hi @Markjosephp, thanks for waiting. I’m the only one who has access to it in Google Home & I deleted all routines. Still not having any success 😔 I’m going to create a workaround by programming a new schedule at 7:00 PM each night to set it to 68 so that we don’t get blasted by warm air every night.

Uh oh! I'm sorry to hear the issue still persists.
We can give it another shot by creating a schedule for a specific time where it randomly adjusts the temperature and seeing how it goes. Also, as an additional question, were there any electrical appliances, power outlets, or any heat source near the thermostat that may have triggered the temperature? It might affect the sudden change in temperature if your thermostat detects a temperature change.
