Anything is possible.

Is there a thermostat connected now? How many wires go to it?

Yes a cheap Honeywell with 2 wires.

You would be better off running a new 5 conductor thermostat cable to the nest and then use blue for the C wire. Do you have a C terminal at the pellet stove?

The smart thermostats all require a C wire to provide stable power to keep the battery charging and the wifi connected.

No only 2 wire out of pellet stove. Was looking at the c adapter.

You still need a C terminal at the stove for the adapter to connect to the common of the transformer.

Yes, you can. I would use the Google Nest Thermostat and you will need to use the Google Nest Power Connector with an external 24Vac transformer.
