Do you set all your devices to connect to google wifi?

Once google wifi is set up, I see that some of my devices are connecting to it because of proximity. Is it best to have them all connect to google wifi or keep some connecting directly to my original wifi too?

Yes this will ensure that everything got to communicate with each other. Personally I like to only run one Wi-Fi network at home as it reduces potential communication conflicts from stray signals.

You would want your devices on the same network, especially if they are smart home devices, so that they can communicate properly.
