I have a Google WiFi Router with 3 points. Can I turn the router into a point while making a new Google Nest Router be the center of the existing network? Or do I have to create a completely new network?

You have to start fresh when replacing the main one.

As @olavrb said, you will have to create a new network. You can reuse your existing hardware, but you'll have to factory reset it first. When you create the new network, you can reuse the same network name and shared password so all of your existing client devices can connect to it without having to be reconfigured, which will make the process a lot simpler.
