I have T-Mobile home internet and connected 3 Google Nest Wi-Fi units. The T-Mobile home internet is a gateway, combo modem and router. Is there any benefit to keeping some of my devices connected to the T-Mobile router or should I move them all to the Google Nest router?

Have a read on "double NAT":
Short answer: You are now running double NAT, two routers with NAT, firewall, DHCP essentially. Devices connected to Nest Wifi won't be able to talk with devices connected to the combo modem and vice versa.
Recommended setup is to bridge the ISP equipment, then connect all devices to Nest Wifi. If you need more LAN ports, adding an unmanaged switch behind the primary/ main Nest Wifi is the way to go.
