Upgraded my crappy supplier modem for the google nest system and now I can’t connect my Mirabella projector or a few other smart lights as I cannot switch to 2.4ghz and they won’t connect using 5ghz. Is there a way to do this?

No there isn't.
There are workarounds like using an router/ access point capable of broadcasting 2.4ghz only SSID, set it up with the same Wi-Fi name (SSID) and password as your Nest Wifi network, when devices have connected turn it off and turn Nest Wifi back on.

Unfortunately that doesn’t help at all as all lights only connect via 2.4ghz band and are not 5ghz comparable. It’s really disappointing google nest doesn’t work like every other router on the planet and allow you to choose which network to connect to.

Sorry about the device setup frustration you're having. I know it can really be irritating to not have devices online. I do have a possible workaround for you, however.
If you have access to a mobile phone that can create a hotspot network, try setting up the hotspot with the same newtork name and password as your main network and get your 2.4GHz only device to connect to the hotspot. Once they have been set up and connected, turn off the hotspot and see if they will connect to your main network at that point. We have seen a lot of users have success doing this. If that doesn't work, I have other methods we can try.
