My modem is located in the basement where the fiber enters the house and I want my Nest on the main floor. What category of wire is necessary to run between the two? Will CAT5e work or do I need CAT6?

It's a 1Gbps connection, so Cat 5e should be good enough, though you may find Cat 6 is easier to find at this point, and not much more expensive. I'd probably run Cat 6 just for future-proofing, though, since faster connections will be coming in the future, and if you're putting in the effort to run cable, you don't want to have to come back and replace it a few years from now.
