I just found a new solution for this problem!
Even if you have chosen correct language for the device, but it still displaying another language, you can do as I did:
1. Go the Language Setting
2. Add another language (even if you don't want to use this later)
3. When you add a new language the Google Nest "updates" with the correct language you have in top of the list
4. Just remove the other language you just added (or let it be)
5. The Google Nest keeps showing the correct language in the display
My case: I wanted the Nest to have Swedish language, but it shown English (United States) even if that language wasn't in the list of lanugages in the Language Settings. I added English (United States), and then it was added below Swedish and the Google Nest started to show Swedish. I then removed the English language from the list and the Nest kept the language language both in list and in display language.
