Sleep sounds haven’t been working for the past few days. I’ll say “Hey Google, play country night sounds for 30 minutes” for example and my Nest Hub responds with “ Sorry, something went wrong, when you are ready give it another try” any one else having this issue?

I understand that you must be frustrated that the sleep sounds haven't been working for the past few nights. Getting a good night's sleep is important. On top of that, it sounds like you're encountering an error message when you try to use it.
Sometimes there are temporary issues with Google Assistant or the Nest Hub itself. A simple reboot of your Nest Hub might clear things up.
