Thanks for sharing details about the issue here. I know how challenging it is when your having issues with your Google Nest Hub. Let's get to the bottom of this. A few questions: when did the issue start? Which Nest Hub are you having an issue with (Nest Hub 1st, 2nd gen, or Hub Max)? What country are you located in? Does rebooting the device fix the issue? Have you tried resetting it?
@drew-stott: Please provide the firmware and operating system version of your device.

Hub Max. US. Have rebooted and reset. Today it is suddenly working normally. Not sure what changed.
