I would like to give my nest mini and hub display voice commands without the device speaking back.
There is an option to change the dpeech output for my phone in the Google Home app, but this setting isn't available for nest devices.
I found a previous thread for this issue that was blatantly ignored (https://www.googlenestcommunity.com/t5/Nest-Wifi/Assistant-Speech-Output-Nest-Points-Responding-to-C...). Kindly may this problem be reassessed and resolved.
Overall, I'd like to have my devices execute commands in silence - similar to how you can set an alexa device to speak only when neccessary.

There isn't a feature or setting that would currently enable you to do that unfortunately. This is mostly a user to user community, therefore if this is important to you, I’d encourage you to also send this feedback directly to Google. You will not receive a response, unless Google need more details from you, however the team are still reading the feedback.
