Our Google Nest only works and has a display when plugged into a power source. As soon as I unplug it to use battery power, the whole thing shuts down and screen turns off.

Hey Hyork13,
Welcome to the Google Nest Community Forum.
Please note that Nest Hub or any of our Google Home/Nest speakers and displays doesn't have a built-in battery and must be plugged into a wall outlet to work.
We'll take this as feedback, and pass it along to the team. I also suggest that you send feedback using your devices by saying, "Hey Google, send feedback," or by following the steps on this link.
Cheers,
Muddi
